Cake, Part II

Sunday night ALREADY? How does it always come so fast? If you are catching up on weekend posts you can read about my fun Saturday and my yummy Italian food.

I didn't really get much accomplished today, but it was definitely a fun day.

I started the day with a kickboxing class. I haven't done kickboxing since high school, but it was a lot of fun and a great work out. Lately I have total work out ADD- that's the second new class I've tried in less than a week. I was a little worried about my knee because there were a lot of jumping jacks thrown into the mix but it's not really bothering me so I guess my own modified jumping jacks (aka do normal ones but put all weight on my right leg) worked!

When I was younger we used to go to this fancy brunch at a golf club that my grandfather, and now my dad belong to. We haven't been in years but we decided to go again this year since my sister and brother were both home from school at the same time. I love any opportunity to hang out with the whole fam, and Eric's mom came to brunch with us too! I have trouble with going out to breakfast because a lot of breakfast food tends to have either lots of oil or butter (pancakes, waffles, french toast) or cheese (omelets), neither of which I can do. So I had a pretty random selection of food at brunch today...

I know I just said I can't eat waffles, but seriously I can't live on some fruit, potatoes and a shrimp haha. Plus the waffle was seriously amazing. It kind of tasted like cake actually.

I did go back to lunch side of the buffet for a bit of chicken and another roll, but I forgot to take a picture :)

It was good to have all the "kids" home for the weekend :) Well, I'm always home- but the college kids haha.

We headed back to my parents house after brunch to do Eric's second birthday cake.

My mom made Eric red velvet cake which he has been dying to try for awhile...

Although you wouldn't know by my blog the past week, Eric is not a huge cake person. He'll eat it, but he usually does not go back for seconds. Lets just say he went back for seconds on this cake, and took a piece home so I'd say he gives the red velvet cake his seal of approval. I only had a taste because I am more of a yellow cake person (which fortunately was part of this celebration as well). I had a small piece of yellow cake with a side of vanilla ice cream. Yum.

When I got home tonight I began "Operation stop eating cake and ice cream or your wedding dress is not going to fit." Haha. I wanted to try some Trader Joe's Carrot and Ginger Soup for dinner but it was yucky (in my opinion) so I decided to make the most random dinner instead. Ever mixed beans and egg whites? cuz I did...

I made an egg white omelette with black beans and mushrooms. Plus a delicious sour dough roll from Panera. This may seem random (and it is) but in fact it was just the leftovers I had from making my veggie and black bean pizza that I'll be eating for lunch this week. Oh well, it was pretty tasty- and also healthy and quick, both priorities for my dinner tonight.

While I was eating I planned out my work out schedule for the week. I was sort of joking about "Operation stop eating cake and ice cream or your wedding dress is not going to fit." BUT, my wedding dress is due to arrive in the store any day now and I do need to lose a few pounds to be back where I was when I was measured for it. SO...planning (and follow through) will be key.

Week of March 7th Work Out Plan

Monday- Spinning
Tuesday- Yoga
Wednesday- Core & Urban Rebounding
Thursday- Body Pump (may change based on how morning class on Wednesday goes)
Friday- Off
Saturday- Spinning & Strength Training
Sunday- Kickboxing and Abs

One of the big changes I'll be making to my work out schedule is squeezing in two morning work outs this week. I used to be a morning exerciser, but since I do longer work outs than I used to it's hard for me to get them in before work. However, I hate having no time to relax at night, so I'm going for it this week. I'll have to get up a little earlier, and compromise getting some morning work done, but hopefully it will work out okay :) Thanks to everyone who gave me breakfast ideas for quick breakfasts. I actually used to make my oatmeal at work every morning and I got out of the habit, so I may go down that road again this week. I'll have to bring my giant bowl back into work.

I also have big plans to try chia seeds and tempeh this week (not together), and to seriously portion control my ice cream intake. I'll let you know how it goes. I hope everyone has a good Monday, as good as Monday can be anyway.

  1. I'm not a huge cake person, but I attended a yoga meditation class today, and I thought about cake during the whole thing :) I love everything I did this weekend because it was beeeeeautiful!

  3. Nothing! And it was bliss! Actually, I did start painting again today and then made dinner with the boyfriend! It was delicious. I have finally mastered the art of risotto!

  4. Mmm, tempeh. Grill it up and eat in a whole grain wrap with lettuce, tomato, avocado and a little cheese. Delicious!

  6. Gah, I love ice-cream too, but luckily its basically the only dessert I really truly enjoy, because I don't have a sweet tooth...My advice: eat it out of a cone, so then you ultimately end up eating only about a scoop :)

  7. Wow, I've missed a lot! So Eric had a nice birthday, and actually ate two pieces of his cake, score! I wish Nick didn't like cake, he has a bigger sweet tooth than me! He loves Red Velvet and I think we might get that for our wedding cake.

    I love the picture of you and your siblings. You're such a gorgeous family.

    Hmm..what next? Ok, fitting into your wedding dress, well I bet that kickboxing class with help! I am joining a gym soon and really hope they have kickboxing, I have never tried it. We did belly dancing this weekend in Philly, for a bachelorette "outing" and it was a blast!

    Your egg white omelet sounds really good, but sorry about the TJs soup. I think they are hit and miss, for sure.

  9. I am definitely an "eat the whole cake" kinda person. I never bake sweets because they are gone in one day. Terrible but I have no self control. It's easier to just not make it!

    I love trying new classes and fitness routine. I too get bored with my workouts. The same ol' workout with the same ol' music just doesn't do it for me! :)

  10. I'm a yellow cake person too but I love the frosting on red velvet cakes. We sometimes get them for b-day cakes at work and a co-worker and I will split a piece - he'll eat the cake part and I'll eat the frosting.

  11. The best thing I did was have dinner at my brother's house tonight!!!

    I am going to totally switch up my work outs this week! Going to avoid running on the dreadmill for awhile. I'll be doing some biking, running on the elliptical, and hopefully some swimming in the new suit I bought today!

  12. looks like a fun weekend :) i am going to be eating alot more quinoa starting this week because i found some prewashed at the grocery store, wahoo! rinsing and rinsing those little buggers is a pain in the neck. i don't think i have any new foods slated for this week but i do have a goal of hitting the gym four times :)

    My Eric doesn't like cake AT ALL either, haha!!

    I had a great weekend - super productive. Got a great run in in the sunshine on Saturday and a HUGE grocery shopping trip done today! I can't believe the weekend is already over :(

  14. What a fun weekend! That cake looks wonderful! I don't think I've ever actually had red velvet cake.

    I wish I had exciting weekend activities to share, but unfortunately, I was studying. I'm in the home stretch for one class though, so things should lighten up in time for the really nice weather.

  15. I have been trying to get up early three times a week and do my 20 minute pilates video before work. I don't usually do any exercising in the morning but I love the pilates because it is just for the buns and thighs so I am on the mat the whole time and get to gradually wake up. It doesn't require all that much effort but it's good for toning.

    I am attempting to make some eating changes this week because I feel like I have been gaining weight and I want that to stop!

  17. dang it totally just ate my other comment!! grrr well, those celebrations look wonderful! I would be tempted with both those cakes. We just did leftover omelets last night too and I've never known a leftover an omelet didn't like lol have a great week! your workout schedule looks packed, you go girl!!!

  18. Yum! I am entering the birthday zone in our family this weekend with daughter and son-in-law both celebrating March birthdays. I am going to try to increase my miles in running now that the weather is better and I have no more excuses. I am doing some dvd workouts for strength and cardio, too.

    I love yellow cake as well - with chocolate frosting.

  21. omg Melissa from crunches for cupcakes got me this red velvet cake shower gel for christmas and my fiance uses it probably more than I do and he is DYING to try the cake. We've never had it!
