Last night of the Giveaway!


First of all, the Trader Joe's Giveaway ends tonight! Don't forget to enter :) I'll announce the winner tomorrow night! 

It has been a CRAZY busy week for some reason, ugh! But I wanted to post this delicious dinner (or it could easily be lunch) I made the other day. It was completely inspired by Meghan, who makes tons of great meals with foods I happen to like so I am constantly reading her blog and writing down ideas. 





It's basically a salmon salad. I love salmon, but it's tough to get to the grocery store multiple times a week to get fresh fish, not too mention expensive. So I used canned salmon from Trader Joe's for the first time ever. I was a little scare but it was so good! I mixed it with some zucchini, a little bit of greek yogurt (plain) and small pieces of an apple. I have a theory about apples that nearly everything is better with a little bit of apple. I ate the rest of the apple on the side, as you can see. All in all, it was a filling and yummy dinner, not to mention SO easy to make!
My blog is acting up for some reason so I am going to make this short, but I hope everyone is having a great week so far.

  1. Looks delicious! I bought a packet of salmon the other day. I was thinking of using it for dinner tomorrow. I've heard the tuna in the packets tastes better than in the cans. I wonder if salmon is the same.

  3. That looks yummy! I like having canned salmon in sandwiches or wraps, but I've never mixed it with greek yogurt before! That sounds great.

  4. I'm glad to know about the canned tuna, I may want to give it a whirl. I buy Trader Joe's salmon (frozen) and it's excellent. I only buy it once every other week, it's great!
