This morning when I woke up I could tell my body was really curious about what I was trying to pull last night when I finished an insane first day back at work with a almost 2 hour work out using muscles I did not even know I had anymore. I was exhausted and my entire body hurt. Also I was really hungry.
After reading Gina's post this morning on post work out fuel I decided I am going to have to refuel after my crazy Monday nights with either a greek yogurt or some egg whites on toast. I probably would've recovered better from the hunger if my yogurt I brought to work today was not moldy (it wasn't supposed to expire until January 19th...clearly not). I had to eat about 100 calories of cereal and a banana for lunch...not quite enough.
I did take a total break from the gym today but instead I decided to give my body two flu shots! I think I already had H1N1 but I figured since I don't know for sure I might as well get the H1N1 and seasonal flu vaccine. Everyone at the clinic thought I was nuts because I insisted on getting the injection instead of the nasal spray. I was already a little unsure about the nasal spray when I found out it was live flu virus, but when I found out that most doctors are getting the injection I thought- no way on the nasal spray. If doctors don't even want the nasal spray, why would I? Besides I figured my arms are already sore from my weight class last night, might as well add to it.
By the time I got home tonight I was exhausted and starving! I decided to try out a quick dinner that I dreamed up the other day. It literally took me a total of about 7 minutes to prepare.
I stuck a sweet potato in the microwave for about 5-6 minutes and then threw on some black beans and delicious Trader Joe's chunky salsa. The flavor combination was AMAZING and did I mention how quick and painless this was to prepare? That almost never happens with something so healthy!
I used a pretty giant sweet potato for this, but I think if I used a smaller one this could be a pretty delicious lunch too. Now I am enjoying my greek yogurt that should've been part of my lunch as dessert :)

That does sound really good! I get so sick of sweet potatoes sometimes and I think it's because I don't know what to do with them! Now I've got something new to try :)

oohh Sweet Potato & Black Beans are such a fantastic combo! I made Chicken, SP & Black Bean enchiladas recently.. yum!

ReplyDeleteI LOVE taco salad with beans lately. Lettuce, some chips crunched up, topped with some beans (heated in the microwave) and salsa and sour cream. Friggin YUM! You can also stuff all of that in a tortilla shell and have a burrito!!
